Do you have fond memories of eating Creamsicles in the summer during your childhood? If you do, you’re not alone. People everywhere love those fruity, creamy popsicles since they first came out on the market.

But now, Creamsicles have gotten even better.

Yup, believe it or not, someone managed to make those yummy popsicles thousands of times more delicious than they already were. And they did that by turning them into a cheesecake.

Let’s be clear: this cheesecake isn’t made from those amazing popsicles. But it is made from ingredients that perfectly combine the flavors to make what everyone claims tastes exactly like the perfect summer popsicle.

If you think this might be the best dessert you’ve ever tasted, you’re probably right.

With oranges, sour cream, vanilla cookie crumbles (actually Golden Oreos, to be more specific), whipped cream, and orange Jell-O, this is a decadent dessert that’s the perfect homage to the classic popsicle.

Here’s What You Need:

FOR THE CRUST

– 24 whole Golden Oreo cookies, crushed

– 6 tbsp. melted butter

– Pinch of kosher salt

FOR THE FILLING

– 1 (3-oz.) box orange Jell-O
– 1 c. boiling water
– 2 c. whipped topping
– 2 (8-oz.) blocks cream cheese, softened
– 1/4 c. sour cream
– 1 c. powdered sugar
– 1 tsp. pure vanilla extract
– Pinch of kosher salt

GARNISH (Optional)

– 1 c. whipped topping

– 1 clementine, peeled and separated into segments

Step 1:

In a large bowl whisk together orange Jell-O and boiling water until the Jell-O is completely dissolved. Once mixed, set it aside to cool completely.

Step 2:

Make the crust. In a medium-sized bowl mix together the Oreo crumbs, salt and butter. Once it becomes chunky press it into the bottom of an 8″ springform pan and up along the sides.

If you’ve never made cheesecake before, don’t worry — it’s not as hard as you think.

You just might need to work with some new textures that you’re not used to while baking.

“The batter might feel kind of loose as you’re adding it to the pan—don’t worry!” says Lena Abraham of Delish. “After a couple hours in the refrigerator, the cheesecake mixture will be perfectly firm and creamy.”

Step 3:

Make the filling. Grab another large bowl and beat the cream cheese and sour cream inside of it until the mixture becomes smooth. Once smooth add powdered sugar, vanilla, and salt. Gently fold the whipped topping into the cream cheese mixture and then pour half of the mixture into cooled Jell-O. From there whisk it until the mixture is smooth.

Step 4:

Go back to your crust and alternate pouring 1/4 cup dollops of cream cheese and Jell-O mixtures until you’ve used them both up completely. Grab a butter knife and gently swirl the top layers together to give it the marbled look. Cover it and then plop it into the fridge for 6 hours or until it has firmed up.

Step 5:

Once firm, plop dollops of whipped topping on top and decorate with clementine pieces. If you’d like to garnish more, add orange zest on top for an extra burst of orange flavor. Enjoy!

I was buckling under the pressure. Sure, this could end badly. But it could also end up outstandingly awesome. And despite all my trepidation, these truffles were easy.”

FAQs

Why did my cheesecake explode? ›

THE CAUSE: Overmixing the batter. When making your filling, overmixing can lead to incorporating too much air into the batter. Once baked, the air bubbles will burst, and the cheesecake will fall and crack.

Which tastes better, baked or no-bake cheesecake? ›

They both are great in their own way. It all narrows down to your personal preferences. If you enjoy dense and velvety cake, a baked cheesecake is the one for you. Or if you crave some light and airy dessert post-dinner, go for the no-bake one.

How to fix a no-bake cheesecake that didn't set? ›

If your cheesecake filling goes soupy in texture, don't worry—you can fix it! Just add a little gelatin to the mix, and it will set up in the fridge just fine.

How long to let no-bake cheesecake set in the fridge? ›

Spoon the filling into the pan on top of the crust: Smooth the top of the cheesecake. Cover with plastic wrap and refrigerate for at least 1 hour or overnight to firm up.

Why did my cheesecake inflate? ›

When the batter is overmixed, too much air is added and will cause your cake to rise in the oven and then collapse and crack when being removed. Don't overbake your cake. It may crack if it's too dry.

What happens when you over mix cheesecake batter? ›

Avoid Overmixing: Unlike other cakes, where beating air into the batter is key, overmixed cheesecake can rise, fall and then crack from that excess air. Keeping ingredients (cheese, eggs, liquids and flavorings) at room temperature can help.

What is the best cream cheese brand for no bake cheesecake? ›

If you're a fan of no-bake desserts—especially no-bake cheesecakes—you'll want to pick up Prairie Farms cream cheese. This cream cheese was the firmest we sampled. While that made it harder to spread across bagels, our Test Kitchen tasters agree this quality makes it perfect for no-bake recipes.

How do you know when a no bake cheesecake is set? ›

Try this: The cheesecake should be shiny and firm to the touch when set. You can move the cheesecake to the fridge for 30 minutes before slicing, but freezing any longer will make for a frozen cheesecake without the same delightfully creamy texture as the just-refrigerated version.

Does no bake cheesecake taste good? ›

No-bake cheesecake is the perfect summer dessert that can be made without turning on your oven at all! I love the simplicity of no-bake cheesecake (especially served with fresh fruit). Unlike a classic New York cheesecake, no-bake cheesecake is generally lighter with a creamier texture.

Why is my no-bake cheesecake base so hard? ›

If your cheesecake base is too hard – this can be down to a few things, such as brands of biscuits, too much butter, or a really cold fridge (or if you froze the cheesecake). Generally I stick to a rule of about 100-150g of butter in a biscuit base.

Can you leave no-bake cheesecake out overnight? ›

Thus, cheesecake is perishable. Even if your recipe is traditional in that you bake your cheesecake (no-bake recipes don't contain eggs), once it has had a chance to cool outside the oven (about an hour), it must go back in the fridge.

Will my no-bake cheesecake set faster in the freezer? ›

Obviously, the goal is to create a firm cheesecake filling, similar to a baked cheesecake filling. After the chill time, if your cheesecake still isn't firm enough, you can freeze it to help it set up. Be careful not to freeze it too long unwrapped though; it can cause the texture to become gritty.

Can I use milk instead of cream in cheesecake? ›

edit: i replaced my cream with 25% sourcream 1tbsp of milk powder and remainder with milk for a new york cheesecake. turned out terrific. it was super rich so i'd say heavy cream would've honestly made it too rich!

What causes cheesecake to puff up? ›

Over-beating whips too much air into cheesecake batter and can cause the cake to puff up, then sink, shrink, and crack. It doesn't improve the texture either. Stop beating as soon as the batter is smooth and creamy rather than fluffy (unless otherwise directed).

What would cause a cake to explode? ›

The oven temperature is too high. If the top crust forms and sets before the cake has finished rising, the middle will try to push through the crust as it continues to bake, causing it to crack and possibly dome.

What does overcooked cheesecake look like? ›

Overbaked cheesecake will crack and the texture will be dry and gritty. Egg proteins become quite firm and tightly coiled when cooked quickly at a high temperature, but can be silky-smooth and creamy when cooked gently at a low temperature.

Why did my baked cheesecake split? ›

Why cheesecake cracks: a sudden temperature change. Cheesecake will sink and contract a bit as it cools; if this cooling happens too suddenly, the cake can crack. To prevent this from happening, cool your cheesecake right in the turned-off oven.
