On most days, I usually gravitate towards beer and wine when having a drink. They are both great to drink, but you can also bake with beer and make wine popsicles for desserts.

But there’s something about the taste of liqueur and other strong spirits during the holidays. Making an Irish coffee just warms the belly.

For hot drinks, I love to add a shot to my Red Velvet Hot Chocolate. Or, if I’m craving something cold, make this Bailey’s Frozen Hot Chocolate.

When the holidays roll around, I love giving desserts as Christmas gifts. We all have our favorite recipes for the best Christmas cookies, but sometimes you want to mix things up. That’s where recipes like this recipe, my coffee truffles recipe, and red velvet fudge come in.

These homemade Baileys truffles are always a delicious treat and the perfect gift. The great thing is, they’re easier to make than you think.

That’s because this Bailey’s chocolate truffle recipe is a no bake recipe! You don’t need a double-boiler or any special equipment. This means you can even make these sweet treats in warmer climates.

Recipes for chocolate truffles have a lot in common, but the addition of cream liqueur in this recipe makes it stand out. And for those that don’t drink, this is a great way to get the delicious Irish cream flavor without the actual alcohol.

What is a chocolate truffle?

Chocolate truffles have a rich and creamy ganache center covered in melted chocolate or dusted in cocoa powder.

Why are chocolate truffles called truffles?

Truffles get their name from the fungus because of their similar shape and both are considered a delicacy.

Unlike other truffle recipes, these Irish cream truffles only use a handful of ingredients. It does not call for heavy whipping cream, unsweetened cocoa powder, confectioner’s sugar, or coconut oil.

How to Make Baileys Chocolate Truffles

You’ll want to make sure your cream cheese and butter are softened before you get started. You’ll need to make sure they’re at room temperature for the delicious truffle filling.

In a medium mixing bowl, cream together the butter and cream cheese until it’s light and fluffy with awire whisk.

Then stir in the Baileys Irish Cream and graham cracker crumbs before adding in powdered sugar one cup at a time until completely blended. Cover the truffle mixture and refrigerate for at least 2 hours, or overnight for best results.

Line a baking sheet with parchment paper or wax paper and set aside. Scoop the batter into truffle balls using a spoon, melon baller, or this small cookie scoop and put it on the prepared baking sheet. Place the chocolate balls into the freezer for 10-15 minutes.

While the truffles are in the chilling process, melt the chocolate chips in the microwave in a microwave safe bowl. Microwave the chocolate chips in 30-second increments. Continue to cook until the chocolate mixture is nearly boiling but completely melted.

Now for the fun part. Remove truffles from the freezer and place them into melted chocolate and roll.

Allow to cool and the chocolate coating to harden on parchment paper. Use a spoon to drizzle the remaining melted chocolate over the truffles.

These delicious treats could also be topped with some chocolate sprinkles or edible glitter for a fun twist.

  1. Cream the butter and cream cheese together until light and fluffy.

  2. Mix in the graham cracker crumbs and Bailey's Irish Cream.

  3. Add the powdered sugar, 1 cup at a time, until completely mixed in.

  4. Cover and chill in the fridge for at least 2 hours (overnight is better)

  5. Scoop batter into balls and place on parchment paper.

  6. Place balls into freezer for 10-15 minutes

  7. While the batter is freezing, melt the chocolate in the microwave in 30 second increments until completely melted.

  8. Dip balls into chocolate, covering completely.

  9. Place back on parchment paper and let cool until chocolate has hardened.

  10. Use a spoon to drizzle remaining melted chocolate over the truffles
